Looking for a gift of experience this Christmas? This bundle of exceptional tea and chocolate is what we call pure joy.
Begin with a sip of tea to warm up your taste buds. Take a bite of chocolate, press it against the roof of your mouth and let it melt slowly. Repeat these steps, reverse the order, or have a piece of chocolate with a sip of tea and let both flavours coat your tongue. Observe the texture, mouthfeel and nuanced flavour layers. Experiment around with different combinations to find your favourite pairing!

Chocolate and tea share many similar characteristics, from floral, fruity or nutty aromas through to levels of astringency from tannins. In this package, we have curated 4 single origin dark chocolate bars: Pak Eddy 70% (Indonesia), Rehoboth Estate 70% (Philippines), Mava Ottange 70% (Madagascar) and Kokoa Kamili 72% (Tanzania) to pair with a lightly roasted Oolong: Duck Shit Dancong from the Phoenix Mountains in Guang Dong, China. A bag of cacao nibs have also been included for snacking or brewing into an antioxidant-rich cacao tea.

Most of us are used to having our chocolates brown. But did you know that fresh cacao beans are actually purple (and even white for the rare Trinitario varietals)?
In order to develop complex flavours, the beans must be subjected to a fermentation process where tannins present in the beans, which cause astringency and extreme bitterness, are oxidized.
This results in the formation of aromatic substances and reduced bitterness, and also gives rise to the familiar reddish brown shade of cacao beans.

Chewing on our Mava Ottange chocolate this cozy Friday night and reminiscing the old days when our journey began.
About five years ago, a friend brought us a Madagascar single origin craft chocolate bar as a gift for Christmas, which blew us away - it was full of raspberry, and almond flavour! But there were only two ingredients on the list - cacao and sugar. It was then that we realised the taste of chocolates could be so flat with commercial bars yet so flavourful with the craft chocolates.
Fast forward to today, we’ve launched single origin chocolates from so many countries but this.
This particular one still strikes a chord with us. .

People we meet often ask, “What does Fossa mean?” It has a nice ring to it 😉 and also resonates with our beginnings and what we do.
Fossa is an animal that is unique to the forests in Madagascar – the same origin of the craft chocolate bar we tasted years ago that inspired our journey. Those who have heard or seen this animal would also know of it being very nimble and agile, with a fierce, wild personality. This relates to our approach in chocolate making, where we constantly challenge ourselves to create bold yet delicious and memorable flavours.

Mi Lan Xiang (Honey Orchird) is a dancong tea cultivated in the Phoenix Mountain of Guangdong Province.

This lot of Oolong, which was hand-harvested from the Tian Zhu Keng village in spring 2018, presents a roasty, sweet and fragrant note.

Also presenting to you a special lot of aged Hongcha (western black tea) which was hand-harvested from the Zhen Ya village in Spring 2010 and has a characteristic lychee fragrance and red date sweetness.

Complemented by the biscuity Kokoa Kamili cacao from Tanzania, these tea bars are the perfect treat to savour this weekend.
