Homemade Granola & Drinking Chocolate

Yield: 8 x 8 inch baking pan

Granola
Ingredients:
- 1 and 1/2 cups quick-cook oats (e.g. Quaker)
- 1/2 cup pumpkin seeds
- 1/2 cup sunflower seeds
- 1/2 cup dried cranberry
- 1/2 cup chopped walnuts
- 1/2 cup desiccated coconut
- 1/4 cup honey
- 1/4 cup olive oil
- 1/4 cup cocoa nibs
- Zest of 1 orange
- Pinch of salt

Directions:
1. Preheat oven to 190∘C (fan-forced). Line your 8" x 8" square baking pan with parchment paper or lightly spray with cooking spray.
2. Mix all ingredients evenly in a large-enough bowl.
3. Spread the granola mixture onto the baking pan.
4. Bake the granola for 15 minutes (remember to turn the tray at the halfway mark!).
5. Remove the tray from the oven and let it cool down completely before storing it in an airtight container. It will last you up to a week.

Drinking Chocolate
Ingredients:
- 40g Rehoboth Estate 70% drinking chocolate
- 240g Full cream milk

Directions:
1. Heat 200g milk until steaming hot.
2. Pour 1/2 portion of hot milk over 40g chocolate and stir until chocolate is completely melted.
3. Pour remainder hot milk in and stir.

Tips on how to enjoy your granola:
- Top it off with some chocolate shavings or fruits (ie. Raspberry)
- Dunk it into 70% Rehoboth Estate hot/ice drinking chocolate.
- Make the granola yours -- you can replace the dried cranberries/nuts in the recipe with any other types of dried fruit/nuts (just make sure you chop them up if it's too big)
