Drinking Chocolate - Semai Community 72% Malaysia

SGD 35.00

Tasting Notes: Dried cherry, plum, oak, walnut

The Semai Orang Asli community in Pahang, Malaysia lives in harmony with the forests, cultivating pesticide-free cacao in an agroforestry system to preserve its natural biodiversity.

The cacao is fermented in upcycled whisky oak barrels for 4 days with 2 turns in between. They are then dried on raised wooden beds in an enclosed greenhouse which allows complete control over dry rate. The reward for these exacting methods is beans with an intoxicating aroma and pleasing astringency.
