Triang town located across the Titiwangsa mountains in Malaysia is relatively rural and is surrounded by lush, green forests. Here, grafted cacao trees of selected varietals are systematically cultivated on gentle slopes at an altitude of 330m above sea level.
The fruit pods are broken using automation and fermentation takes place for five to six days during which beans are turned twice. After fermentation, the beans go through a pressure jet wash before drying. The reward for these exacting methods is beans with low acidity and an intoxicating aroma.
