We have here something for the chocolate geeks. Two versions of 75% dark chocolate made using the same batch of cacao from Paquibato Village in Davao City of Philippines.
These cacao are the first in the Philippines to have been awarded the top 20 best cocoa in the International Cocoa Awards, a testament to the high quality preparation by the estate.
The flavour profile of the beans is so delightful that we couldn't resist creating two versions - one with the addition of 5% cocoa butter and one without. For the enthusiast, this is a good opportunity to compare and contrast how the addition of cacao butter affects the mouthfeel and flavour release in a chocolate bar.
